Chocolate Peanut Butter Raspberry Quesadilla Snack (Vegan + Gluten-Free) // Thick N Fit Kitchen Recipes

It’s been forever, but I’m finally back! (Fingers crossed nothing else crazy happens in my life). But know that I’ve missed you dearly, and I can’t wait to share what’s been going on in the Thick N Fit Kitchen since you last saw it!

I know so many of you have been loving seeing the transformation process on my IG stories (definitely make sure you’re following me on IG to keep up), so I’m gonna break down everything I did, step-by-step in future blog posts.

Keep an eye out for that. For now, I can’t wait to get into one of my favorite treats!

Let (clap) me (clap) tell (clap) y’all! I don’t know how, but this treat literally tastes like a toaster strudel with way less calories, and features much healthier ingredients. It is also vegan, gluten-free, and delicious!

If you want to make it allergen-free, just swap out the peanut butter for the equally delicious nut-free alternative, sun butter (sunflower seed butter).

Raspberries not your jam? You can also swap out the raspberries for any type of berry of your choosing like strawberries, blueberries or blackberries!

It’s one of my go-to snacks when I’m in a decadent mood, but don’t want to overindulge.

And the best part is that it’s super quick and easy to make, featuring only 5 ingredients!

INGREDIENTS

2-3 tbsp powdered peanut butter or 1-2 tbsp sun butter

1 ½-2 tbsp water or unsweetened almond milk 

1 tsp Olive oil or cooking spray

1 Ezekiel sprouted grain tortilla

½ tbsp allergen free mini chocolate chips

½ - cup raspberries

DIRECTIONS

  1. Place powdered peanut butter and your choice of either water or unsweetened almond milk in a small bowl and mix until you get a desired consistency (feel free to add more milk/water if you want a creamier consistency).

  2. Put pan on low, and coat lightly/spray lightly with olive oil or cooking oil of your choice, and let heat up.

  3. Add sprouted grain tortilla, and cook both sides until lightly toasted.

  4. Add peanut butter mixture, and spread on half of one side.

  5. Sprinkle mini chocolate chips evenly across peanut butter side. Let chocolate chips get slightly melty before moving on to next step.

  6. Evenly spread raspberries on top of peanut butter side.

  7. Fold the empty side over the peanut butter side, and use a spatula to flip and press it down for a few seconds.

  8. Take quesadilla off the pan, and put on a plate.

  9. Enjoy!


So, listen… I’m very much a “do-what-feels-right-to-you” kind of cook. It honestly felt hella weird writing this out because of how second nature it is for me to just slap it together based on how I’m feeling when I make it. So definitely feel free to make modifications/additions that make you happy.

You can top it off with extra peanut butter, chocolate chips, a raspberry puree, non-dairy whipped cream or enjoy with a handful of nuts. Just remember that any additions you make are additional macros/calories to consider. But this treat is made from primarily natural/minimally processed ingredients anyway. So anything I listed above wouldn’t do too much damage.

I will either have it for breakfast or as a dessert if I want a lil’ somethin’ extra. 

This is a carb heavy dish, but most of those carbs are coming from the raspberries and the sprouted grain wrap, which are both very natural/minimally processed. So, all good carbs!

The chocolate also adds to the carb count, but I try to use clean chocolate like Enjoy Life’s allergy friendly mini chocolate chips. The mini chocolate chips make it seem like your getting more chocolate (at least in my head), but feel free to use regular chocolate chips if you like.

You could also eliminate the chocolate chips, and use water instead of almond milk if you’re trying to make it more on the lighter side.

I am OBSESSED with PB Fit! It’s my favorite powdered peanut butter out there. You can get it on Amazon for a good deal.

The Food For Life Ezekiel tortillas are EVE-(clap)-RE-(clap)-THING-(clap)! When they are lightly toasted, they have this amazing warm crunch to them that truly makes me melt inside. You can get those at Trader Joe’s for the best price.

Enjoy Life’s Allergy Free Mini Chocolate Chips are always my chocolate go to. You can get them on Amazon, but I’ve seen sites like Walgreens offer a good deal on them from time to time.

And don’t get me started on my love story with Simply Balanced Unsweetened Vanilla Almond milk. I literally can’t drink almond milk from any other brand. BUT, I’ve found that the best almond milk that mixes well with PB Fit is actually the Califa Farms Vanilla almond milk (you know if you ballin’ like that and can drop that like $5 for a jug). Luckily Targét will have it on sale from time to time for us commoners lol.
